When Is a Sourdough Starter at Its Peak?
Ask an experienced baker the secret to consistent sourdough and you'll rarely hear "a better recipe." You'll hear use your starter at peak. The peak is the moment your culture has maximum leavening power — and catching it is a skill you can learn in a week of paying attention.
What "peak" actually means
After a feeding, the yeast and bacteria in your starter work through the fresh flour, producing carbon dioxide that inflates the mixture. It climbs, reaches its highest point, holds briefly, then deflates as the food runs out and acidity builds. That highest point — maximum gas production, moderate acidity — is the peak, and it's the sweet spot for mixing dough or building a levain.
Why it matters so much
Use the starter too early and you're seeding your dough with a culture that hasn't reached full strength: slow fermentation, dense crumb. Use it too late — after it has collapsed — and you carry extra acidity into the dough: gluten degrades faster, flavor turns sharp, and the rise suffers anyway because the yeast are past their prime.
The same logic applies to maintenance. Feeding a starter long after its peak transfers that built-up acidity to the next generation, which is how starters end up thin, vinegary and sluggish.
The signs of peak
- Volume: a healthy starter doubles at minimum; a strong one triples. Put a rubber band on the jar right after feeding so growth is obvious.
- The dome: while climbing, the surface is domed. When the dome flattens — just barely level — you're at peak. Once the center sinks, you're past it.
- Bubble structure: the sides of the jar show a dense network of bubbles, not a few large soapy ones.
- Smell: pleasantly fermented and fruity at peak; sharp, acetone-like when overripe.
The classic "float test" (dropping a spoonful in water) is a rough proxy at best — well-stirred or high-hydration starters can fail it at peak, and past-peak starters can pass. The jar tells you more than the glass of water does.
What moves the peak window
Two levers control how fast your starter peaks:
- Feeding ratio. A small meal (1:1:1 — equal parts starter, flour, water) can peak in 4–6 hours. A big meal (1:6:6) stretches it to 10–12 hours, which is why higher ratios suit a twice-a-day routine.
- Temperature. Warmth accelerates everything. The same 1:5:5 feeding might peak in 8 hours at 78°F / 26°C and take 14 or more at 68°F / 20°C. In the fridge, the curve flattens dramatically — a cold starter can hold near its peak state for days.
This is why fixed schedules ("feed every morning, bake at noon") disappoint: the window shifts with your kitchen. Track ratio and temperature, and the peak becomes predictable.
Catching it in practice
For a few days, note when you feed, at what ratio, and roughly how warm the room is. Check the jar every couple of hours and note when the dome flattens. After three or four cycles you'll know your starter's rhythm well enough to plan bakes around it.
